Lumen
Signature plated course at Lumen From the pass
Fine Dining · New York — Copenhagen

Sunlight,
Distilled

An eleven-course tasting room built around one idea: cuisine as clarity. Verdant, citrus-driven, unmistakably ours.

01 — Philosophy

We cook with
restraint, not with rules.

Lumen began as a single idea from chef Elias Moreau: that a plate is most generous when it says less. Every dish here starts with subtraction — the ingredient at its clearest expression, seasoned by light, acid, and time rather than noise.

11Courses in the tasting menu, each under six ingredients
92%Produce sourced within 80km of the dining room
6Years refining a single seasonal philosophy

"The best course of the night is usually the one that looks like nothing happened to it. That's the hardest dish to cook."

Elias Moreau — Executive Chef, Lumen
A moment from the pass at Lumen
Behind the Pass

"Every plate leaves the kitchen the same way it arrived on the page — nothing added at the last second to make it look finished."

02 — Signature

Three ways
we plate a course.

Each signature dish leaves the kitchen the same way it left the page — a citrus note, a mineral note, something to hold it together. Tap through a few of them below.

Duck breast, fries and salad

04 — Atelier

The room is set the same way the plate is — with light left in.

A dining room built on limestone, linen and low golden light. Every table faces the open kitchen; nothing here is hidden from you.

05 — Reserve

Book the room.

Seatings run at 7:00pm and 9:15pm, Tuesday through Sunday. The tasting menu is served to the full table — we ask that all guests dine from the same menu.
